“Working with chef Niall Davidson, the brief was to create a luxury pop-up dining experience. The big question was, how do we make the inside of a stretch tent an appealing place for a fine-dining experience. What I came up with was an adventurous concept that married industrial and natural materials and finishes. It started in Slane as an immersive escape from the restrictions of lockdown and ended up being one of the most exciting places to eat in Dublin city centre”
